Call me Betty Crocker!



Yesterday I decided to play housewife, because I do NOT do that enough, and thought I would put my baking skills to the test! And by baking I mean preparation skills because this dessert actually required no baking whatsoever.

Adam loooooves lemon bars and on the back of a graham cracker box in our pantry was a recipe! One quick trip to the farmers market and I was ready to bake. Here's the easy process.



9 Graham Crackers - Crush them up into crumbs
1/2 Stick of Butter - Melt and combine with graham cracker crumbs
::Take this mixture and press on the bottom of a 9x9 pan

1 qt Nonfat Frozen Vanilla Yogurt
6 oz Lemonade Concentrate
::Combine both together in a bowl and beat until mixed and softened
::Pour the Yogurt/Lemonade mix on top of the crust in the pan and spread so it is even

::Freeze for about 3 hours or until hard!
::Top with whipped cream, Cool Whip, or lemon peel to garnish



That's it, the easiest Lemon Bar recipe ever! Adam has a bit of an obsession with ginger things, such as ginger cookies, ginger bread or ginger cupcakes, so I made a second batch and instead of using graham crackers for the crusty base I used ginger snap cookies. He has eaten almost the entire pan!

I enjoyed making them and am hoping that I will be able to cook and bake a bit more. We have a beautiful, fully-stocked kitchen that I don't get to enjoy enough. :)
